      <image:caption>My first attempt at home smoking. The trout was gutted and cleaned. Then salted in 2 liters of water with 200g of salt for 8 hours, hung and dried for 12 hours. It was finally smoked for about 20 minutes in a small smoking oven using birch chips.

The result was great, with a rich smoked taste!

2-3 dl water



Mix the dough and leave it for 20 minutes. Split into 8 pieces and roll flat. Fry with a little bit of oil on high heat until the color looks right.

      <image:title>Ginataang Puso nang Saging (Banana Heart in Coconot milk)</image:title>
      <image:caption>Puso ng Saging (Tagalog) literally means heart of banana, because it is red and it sort of heart-shaped. It's actually the banana infloresence from where (probably) the banana fruit comes from. The bloom "puso" itself when sliced thinly crosswise is the main ingredient of "ginataang puso ng saging" (Tagalog) or "linabog" or "labog" (Aklanon). It is nothing but the puso cooked in coconut milk.

Ingredients 2 banana blossoms (i just used the ones in the can, 10 oz drained)
1 cup pure coconut milk
2 tbsp vinegar (if using 5% acidity vinegar, try 1:1 vinegar/water)
&#188; cup sliced tomatoes
&#188; cup sliced onion
2 cloves garlic, crushed
1 tbsp vegetable oil
2 dried red chillies (optional if you want this slightly spicy)
salt and pepper to taste
edit Directions 1.If using fresh puso ng saging (banana blossoms): remove the tough covering of the blossoms.
2.Slice thin crosswise.
3.Add 2 tbsp salt and squeeze off bitter juice.
4.Rinse in water and squeeze dry.
5.Set aside.
6.If using canned puso ng saging: drain, rinse then drain again.
7.Slice thin crosswise.
8.Set aside.
9.Heat oil in skillet, if using dried red chillies, add them when the oil is hot but not smoking and let the skins darken somewhat before you add the garlic.
10.Saute garlic until light brown.
11.Add onion, fry till translucent, then add tomatoes.
12.Cook for around 3 minutes.
13.Add banana blossoms and vinegar/water mixture and then bring to boil without stirring.
14.Simmer for around 3 minutes.
15.Add salt and pepper to taste and stir.
16.Continue to cook until banana blossom is tender.
17.Add pure coconut cream and remove from heat.
18.Let stand for a few minutes to help develop the flavours.

      <image:caption>We ate a lot of ripe langka or jackfruit as kids. But I don&#8217;t recall eating unripe jackfruit as a vegetable. I recently featured a Kadyos, Baboy at Langka (KBL) a few months ago. And I have taken to ginataang langka (unripe jackfruit in coconut milk) in the past couple of years and despite it being so rich and probably cholesterol laden, I get a hankering for it every so often. So I decided to make it at home, and while I could have used a palayok, this dish was made on the stove. First, find a small young jackfruit, like the one in the photo, a couple of kilos in weight and it cost just PHP35 from one of my favorite farmers/market stall owners at the FTI market. Next, peel the sappy sucker and slice up the langka meat into smaller almost bite-size pieces, placing them in a bowl of water to prevent browning. Boil the langka for about 15+ minutes or until tender. In another pan over medium high flame, add several cups of coconut milk, chopped onions and or leeks, and bring this to a boil. Add the langka pieces and cook until the sauce is thickened a bit&#8230;
The key now is to add thicker coconut cream to add a richness to the dish. This has to be the first pressing, or in this case, I used the thick upper half of a can of coconut cream. Next, add some whole soriso, or meaty daing na isda, and season with some cracked black pepper. Serve hot with lots of rice. This version tasted delicious. I removed some of the soriso as the dish was getting a bit too salty, but overall, it was rather yummy. Perfect as a side dish to say some fried fish or pork. For me, the sauce must be rather thick not watery, and because of the coconut milk, the dish can be a bit of the naturally sweet side of the taste spectrum&#8230;

You'll need:


65g suger
65g flour
1 egg
chopped hazelnuts



The recipe is very simple:


Mix the flour and sugar
Add the egg and stir it all together
Divide the dough into 6 blobs on a greased baking tray
Flatten the blobs into oval shapes and sprinkle with the hazelnuts
Heat the oven to 190 degrees celsius and bake until they're light golden
Immediately after leaving the oven, wrap the touilles around a rolling pin or something similar to achieve the round shape



When they have cooled off, they will be nice and crispy :)

      <image:caption>Classic pasta and meatball dish - one of my favorites. I made it with homemade fettuccine pasta.

The meatballs are made with 500g minced pork, 1 egg, 1 cooked and mashed potato, a handful of chopped parsley and a little salt and pepper. Mix the ingredients, divide into meatballs, roll them in flour and fry on a hot pan.

When the meatballs are ready, add 2 chopped cloves of garlic to the pan and fry for a few more minutes. Then add 500g tomato passata and 1-2 teaspoons of sugar and let it simmer until thick. Season with salt, pepper and some dried sage leaves.

Cook the pasta and, when done, add a few spoonfuls of the starchy pasta water to the pan to give the tomato sauce a smooth texture.

Topped with parmesan and rosemary oil. Make the rosemary oil by crushing fresh rosemary and sea salt in a mortar and adding olive oil.

I was tired tonight so I didn't go to a huge effort on my dinner. Very basic indeed! It tasted alright. I wasn't entirely satisfied with it and to be honest I was too tired to even finish it!
The vinegar was overpowering but it definitely altered the taste of the pesto.

I steam the carrots and broccoli, and fried the onions(with added balsamic vinaigrette extract, &amp;lt;&amp;lt;&amp;lt; very nice with salads, Or drink. I hope i'm not the only one who enjoys sipping vinegar?)

      <image:caption>I bought some beets last weekend with the thought of making a delicious salad. Well today that thought became reality. Rather than having cereal for the third time today, for dinner I made a beet and spinach salad with apples, cranberries, almonds and goat cheese. My, my, my was it worth it!

Beet and Spinach Salad:

1 Gala Apple

2 tablespoons Dried Cranberries

1 1/2 tablespoons Slivered Almonds

juice from half a Lime

1/2 tablespoon Olive Oil

1 teaspoon Balsamic Vinegar

1/4 teaspoon Paprika

1 cup sliced Beets (i used canned)

handful of Baby Spinach

1 tablespoon herbed Goat Cheese

Slice the apple in half moon pieces and combine with cranberries and almonds in a bowl. Add lime juice, olive oil, balsamic vinegar and paprika. Roast in oven at 350F for about 7 minutes or until apples become soft (I didn't keep track of time, oops).

In the meantime, put spinach in the plate/bowl you'll be eating from and layer the beets on top. Drizzle any left over beet juice (about a tablespoon or so) as well as any remaining lime juice.

Once the apples and company are done in the oven, tower it atop the beets. Crumble the goat cheese and enjoy a marvellous salad! YUM!

Soba Noodles with Zucchini:

88g Soba Noodles

1/2 of a Zucchini

1/4 cup White Onion

Handful chopped Baby Spinach

1/3 cup fat free Plain Yogurt

4 teaspoons Parsley Pesto

1 tablespoon Lite Parmesan

1/4 teaspoon Lemon Pepper

Squeeze of Lemon

Boil your soba noodles according to directions on the package.

Finally julienne the zucchini in long strips, and cut onions just as fine. With about 3 minutes left until your noodles are done, add the onions to the pot. With about 2 minutes left, add the zucchini. Chop the spinach and put aside.

Mix yogurt and pesto. Also put aside.

Drain your pasta and put everything back into the pot. Throw in the spinach and mix until wilted. Pour in yogurt sauce, cheese, and pepper. Stir again.

Squeeze a little lemon juice and put in bowl/plate.

Enjoy!

1 teaspoon Curry Powder

3 tablespoons Cream (I used 1 tablespoon Half and Half, and 2 tablespoons Almond Milk)

1 cup Brown Rice

Thoroughly fry chicken breast. Once cooked, cut into pieces and sprinkle curry powder over top. Continue to cook for about a minute until curry powder has fully coated all of the chicken pieces.

Add cream into the pan. As soon as it begins to bubble, put in the mango chunks (thaw if from frozen).

Stir until all combined and heated through.

Serve over brown rice and garnish with spinach!

88g Soba Noodles

1/8 cup chopped White Onion

1/4 of a Zucchini

1 cup Cauliflower

5 Button Mushrooms

1 tablespoon Low Sodium Soy Sauce

3/4 tablespoon Peanut Butter (i used Kraft whipped peanut butter)

1/2 teaspoon Honey

Boil noodles for about 5-8 minutes and add onions in with about 3 minutes left.

Preheat oven to 475F. Chop cauliflower, zucchini and mushrooms into bit sized pieces. Spread on a baking sheet and bake for about 10 minutes. Stirring once. With a couple minutes left, set the oven to broil to brown the veggies a little more.

Meanwhile, in a separate small bowl, combine soy sauce, peanut butter and honey. Stir until all incorporated and creamy.

Drain noodles, and put back in the pot. Add in veggies and sauce and stir to combine.

Serve and enjoy!

      <image:caption>Been tweaking this recipe a bit since I first attempted them (based on the 1-2-3 cookie dough ratio in Michael Ruhlman's book). I increased the sugar in the shortbread, took a hint from Scottish shortbread recipes and swapped out a bit o the flour for cornstarch for a more tender cookie, and upped the amount of crystallized ginger in the dough so the flavor came across better. Here's the updated recipe (also updated the recipe in the pics from the first batch):

Ingredients

for the cookies


8 oz. sugar (about 1 c.)
12 oz. (3 sticks) unsalted butter, soft (room temperature)
17 oz. all-purpose flour (about 4 c.)
1 oz. corn starch (about 1/4 c.)
3 tbl. matcha powder
1 tsp. vanilla
1/3 c. finely diced crystallized ginger
pinch of salt



for the icing


2 c. confectioners sugar
1/2 tsp. ginger
milk



Preheat oven to 350&#176;F.

Cream the butter and sugar together until the sugar dissolves and lighter in color. Add vanilla, crystallized ginger, and matcha powder and combine. Add flour and salt, mix until well-combined.

Shape dough into 2-2.5&amp;quot; thick log and slice off 1/4&amp;quot; slices, or roll out to 1/4&amp;quot; thickness and cut out shapes with cookie cutters. Place cookies on parchment-lined cookie sheet and bake for 12-14 minutes. Cool on racks.

When cool, make a glaze by combining the confectioners sugar and ginger with cold milk, a few drops at a time, until you get the consistency you want. Dip cooled cookies into the glaze (or drizzle the glaze on if you want a bit less of it, for a less-sweet cookie).

      <image:caption>I keep seeing prepackaged whoopie pies in the cafeteria at the office, but generally stay away because I know they'd more than triple the calorie intake of my usual lunch. But, I've had a craving, and even though I seriously doubt these are any better for me than the prepackaged ones at the office, here we are.

Of course, I couldn't just make one kind of whoopie pie, I had to play with the recipe a little, and ended up making four different kinds: chocolate whoopies filled with peanut butter cream, an almost-traditional whoopie with red velvet cakes and marshmallow cream filling, &#8220;orange creamsicle&#8221; whoopies, and a lemon-ginger whoopie with green tea filling. I made a half of each recipe below. I'm from New England, so these are Maine-style whoopies, which means using made-in-Massachusetts Marshmallow Fluff in the filling. The Amish may balk at that, but they aren't eating these.

Ingredients

Traditional Chocolate Whoopie Cake


1/2 c. solid vegetable shortening
1 c. firmly-packed brown sugar
1 egg
1/3 c. unsweetened dutch process cocoa powder
2 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
1 tsp. vanilla extract
1 c. whole milk



Red Velvet Chocolate Whoopie Cake

Identical to traditional chocolate, but add 2 tbl. (1 oz.) red food coloring to batter

Lemon-Ginger Whoopie Cake


1/2 c. solid vegetable shortening
1 c. sugar
1 egg
2 1/4 c. all-purpose flour
2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
zest of 1 lemon
1 tsp. ginger powder
1&amp;quot; piece of fresh ginger, grated
2 tsp. lemon extract
2 tbl. lemon juice
1/2 tsp. yellow food coloring
1 c. whole milk



Orange Whoopie Cake


1/2 c. solid vegetable shortening
1 c. sugar
1 egg
2 1/4 c. all-purpose flour
1 1/2 tsp. baking soda
1 tsp. baking powder
1 tsp. salt
zest of 1 orange
2 tsp. orange extract
2 tbl. orange juice
1/2 tsp. yellow food coloring
5-6 drops red food coloring
1 c. whole milk



Traditional Marshmallow Cream Whoopie Filling


1 c. solid vegetable shortening
1 1/2 c. confectioner's sugar
2 c. Marshmallow Fluff
1 1/2 tsp. vanilla extract



Peanut Butter Cream Whoopie Filling

Identical to traditional filling, with 1/2 c. smooth peanut butter added

Green Tea Whoopie Filling

Identical to traditional filling, with 2 tsp. matcha powder added

Directions

For the cakes

Preheat oven to 350&#176;F.

Cream shortening and sugar together until light &amp;amp; fluffy. Add egg and beat to combine.

In a separate bowl, combine dry ingredients well. Put milk in measuring cup and add other liquids to the milk (if using lemon or orange juice, hold these out separate to prevent curdling the milk.) While continuing to beat the sugar mixture, alternate adding the dry ingredients and milk in 3-4 batches. Add the lemon or orange juice last if using.

Portion out onto parchment-lined baking sheets in either 1.5 oz. or 1/4 c. portions (I usually do the 1.5 oz. portions since I have a cookie scoop that size.) Using the back of a spoon or an offset spatula, spread the batter out to a 3&amp;quot; (1.5 oz portion) or 4&amp;quot; (1/4 c. portion) circle, and bake for 12-15 minutes, rotating pans midway through cooking, until firm to the touch. Transfer on parchment to cooling racks and allow to cool completely.

For the fillings

Beat together shortening and sugar until well-combined, add Fluff and vanilla (and other flavorings if using) and whisk until light &amp;amp; fluffy.

Assembly

Pair up your cakes so that you have 12 or 9 like-sized pairs. Put a dollop of filling on one cake from a pair, then top with the other cake.

Makes 12 medium or 9 large whoopie pies. I think these are best with a cold glass of milk. They're best stored individually-wrapped in the fridge, or can be bagged after wrapping and frozen.

I tossed enough blueberries to fill four 4 oz. ramekins in a little corn starch and ginger, put them back in the ramekins and added about 1 tsp. honey and a squeeze of lemon juice to each, then topped it with a few heaping tablespoon dollops of a loose buttermilk biscuit batter (working with the ratios from Michael Ruhlman's book) with a little sugar and cornmeal added. Sprinkled some slivered almonds and raw sugar on top and baked them at 400&#176; F for about 18 minutes.

Grease 4 4&amp;quot;x6&amp;quot; mini loaf pans or 2 9&amp;quot;x5&amp;quot; loaf pans.

Combine the dried fruit in a small bowl with the lemon zest and juice and set aside to macerate.

Combine flour, salt, baking soda, baking powder, cinnamon, ginger, cloves, and cardamom in a large bowl and whisk to combine.

In another bowl, combine sugar and eggs, and whisk until pale yellow. Add zucchini, oil, sour cream, and vanilla extract and combine well. Pour over dry ingredients, add macerated fruit, and fold together until combined. Divide evenly into loaf pans, and bake until a skewer inserted near the center comes out clean, 40-45 minutes for small loaf pans, about an hour for the larger pans.

I was putting together a dinner for a close friend who mentioned at the last minute that his guest for the evening was completely vegan and allergic to wheat and dairy! I was intrigued by the name, Popcorn Salad, and then delighted by this surprising combination of three types of corn which give a unique crunch and texture.  Also, the use of a brown butter dressing lends a rich, nutty flavor to this salad. So the next night I set about learning how to brown butter to make the dressing, and re-creating the salad for my dinner guests. It was a hit, so I thought I&#8217;d share it here with you.

Basically it&#8217;s a simple green salad, using mixed greens or whatever you have on hand, liberally adorned with BBQ corn kernels, popcorn and Corn Pops.       <image:caption>Since we&#8217;re in the middle of the BBQ season, I thought I could start off with a  delicious and different barbecue marinade that I came up with recently. It&#8217;s sort of a spin on the Mexican Mol&#233; Poblano, which combines chilies, chocolate and a whole whack of other ingredients in a dark brown sauce. I had recently eaten a truly horrible Mol&#233; at a Queen St., Mexican restaurant that shall go unnamed, so I guess I had the flavor on my mind.

In a big bowl I combined dark cocoa, lime juice, a pinch or two of Chile Pepper and a few dashes of Waha Wera Kiwifruit &amp;amp; Habanero Chili Sauce .   This sweet but hot sauce is available from The Spice Trader on Queen St., West near Trinity Bellwood Park. Somehow the flavor of the cocoa, combined with a little sweetness from the kiwi and the heat of the spices, all blended with the lime juice just sets off flavor explosions! I threw in some chicken legs and let them marinate for a few hours (or overnight if you have the time), then tossed them on the barbecue.

While the ribs got turned into a Hawaiian-by-way-of-Memphis pizza (with pineapple; not my thing, but it's one of the wife's favorites), I took the leftover pulled chicken and homemade Kansas City-style sauce and made this pie, with some thinly sliced red onion and diced red bell pepper. When I was a kid, I was happy with that barely-passable-just-add-hot-water paste in a single-serving package, but I had long since graduated to steel-cut oats (or at the very least rolled oats, when I'm in a hurry). Recently, though, I've started eating whole oat groats (these are from Bob's Red Mill), especially now that I've figured out a way to have them despite my, er, pre-caffeination cognitive haze on weekend mornings.

I've got a little 1.5 quart slow cooker, and a lamp timer. I can set this up before I got to bed, it turns itself on a bit later, and when I get up, good oatmeal.

Ingredients


1/3 c. oat groats
2/3 c. water
2/3 c. milk
1/8 tsp. cinnamon
pinch ground ginger
black pepper
pinch of kosher salt



Directions

Put oats, milk, water, cinnamon, ginger, and a small pinch or grind of black pepper into slow cooker (the amounts here yield a single serving, for more just use a 1:2:2 ratio of groats to water to milk and adjust the spices as you like). Set the lamp timer to turn on 4-5 hours before you get up, plug everything in, and get some sleep. I don't worry about the dairy being out for a few hours before cooking starts, but I suppose if you did you could use ice instead of water.

In the morning, add a pinch of salt, give it a stir, and serve. I like to throw a few toppings on there&#8211;I mixed a little homemade spiced syrup into the porridge here, and topped it wth brown sugar, golden raisins, and slivered almonds; sometimes I go the maple syrup route; other times apple butter. Whatever you like.

This bowl went well with a fresh-baked bagel. I had already had a few sips of coffee, which is the only reason I had the presence of mind to take a picture.

      <image:caption>My second-favorite thing to do with sweet corn (the first being cooking on the cob and eating it with butter and salt). I make these a few times every summer. I think the recipe is based on one from the Cooks Illustrated folks, but I'm not absolutely sure about that.

Ingredients


2-3 ears of corn, husked
1 shallot, minced
2 tbl. flour
2 tbl. corn meal
1/2 tsp. salt
2 tbl. buttermilk
1 egg
cayenne pepper (large pinch, or to taste)
corn oil for frying



Directions

Cut kernels off half of the corn. Grate the kernels on the large holes of a box grater. &#8220;Milk&#8221; the corn cobs by scraping the back of a knife across them. Add the other ingredients (except the oil), and mix well.

Pour enough oil in a large skillet to come to a depth of 1/4" and put over medium-high heat, until the surface shimmers. Put large spoonfuls (about 2 tbl.) of the corn mixture into the pan and cook 1-2 minutes per side, until golden brown. Transfer to a paper towel lined plate to when done, to absorb excess oil.

I like these topped with a little hot sauce (Cholula in this picture).

You can use whatever meat you like - I've tried it with chicken and pork, both worked well.

For 2 people:


200g diced meat (chicken, pork, lamb or beef)
1 organic orange
1 sliced fennel
3dl boiling water
2dl couscous
100g diced feta cheese
A handful of chopped parsley
Salt &amp;amp; pepper



Mix the meat with the salt, pepper, orange zest and juice. Put in the fridge for half an hour.

Put the couscous in a bowl with 2dl of boiling water and stir with a fork when it has absorbed the water.

Remove the meat from the marinade and brown on a hot pan for a few minutes. Add the sliced fennel along with the marinade and cook for a few more minutes.

Add the cooked couscous, feta cheese and 1dl of boiling water to the pan and let it cook for a minute.

Finally, add the chopped parsley and season with salt and pepper. Serve right away!

      <image:caption>I've wanted to try Jamie Oliver's recipe for hamilton squash for a while now, and I decided to finally give it a try. I couldn't get a hold of a butternut squash, so I used a hokkaido pumpkin instead.

Also, I used chantarelles instead of porcini mushrooms, and added a bit of minced beef to the stuffing.

I cut the baked pumpkin in quarters and served. The stuffing worked great with the taste and texture of the pumpkin and it was a good visual experience to eat directly from the pumpkin :)

Cheeseburger with some homemade barbecue sauce (with some saut&#233;ed onions and poblanos from the garden under the cheese), served alongside of pile of french fries. I've been breaking in some new cast iron, and deep frying in the new dutch oven certainly helps.

First time I've tried this technique, which I spotted on Serious Eats a few months back. Blanched in salted, vinegared water, then a quick parcooking, then one final quick fry in very hot oil before serving. I cut these Russets a hair thicker than the Serious Eats recipe called for (personal preference, plus my v-slicer has a blade this size). Probably the best fries I've made at home, so the recipe is a keeper.

      <image:caption>This is an updated version of this dish: Fish burger with potatoes. I tried changing a few things about the original dish, and it was a great improvement!

First off, with the potatoes I was inspired after watching Heston Blumenthal's TV-show In search of perfection, where he tried to cook the perfect crispy potatoes. First the potatoes are cooked until they are almost falling apart, then let them steam of until the surface of the potato is dry. Then they are fried in plenty of olive oil on a hot pan together with sea salt and a handful of fresh rosemary. Finally, put them under the oven grill until they are nice and golden. This results in a really crisp surface with a soft, creamy and rich tasting potato inside.

The burger was made with a spicy focaccia bun, crispy bacon, fresh spinach, tomatoes and a fried fillet of pangasius.

But most important was the sauce, which worked really well with the fish and bacon. Here's the recipe:


2 tbsp mayonnaise
2 tbsp creme fraiche
1 tsp curry
A chopped handful of parsley
A squeeze of lemon juice
Salt and pepper



Mix the ingredients and you have a great sauce for the fish burger. Next time I'll make double the sauce, since it was also great for dipping the potatoes in :)

3 cups white sugar
5 eggs
2 teaspoons vanilla extract
2 teaspoons instant coffee granules dissolved in 1/4 cup hot water
1 cup buttermilk
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
1/2 teaspoon baking powder
1 teaspoon salt

Directions:

1.Preheat oven to 325 degrees F (165 degrees C). Grease and flour the baking pan. Mix together the flour, cocoa, baking powder, and salt. Set aside.


In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the dissolved coffee and buttermilk. Pour batter into prepared pan.
Bake in the preheated oven for 60 to 70 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 20 minutes, then turn out onto a wire rack and cool completely.

      <image:caption>As a fun project with my brother Joakim, we decided to try and make Heston Blumenthal's perfect bangers and mash from scratch.

We went to a country-side butcher and got some nice pork and casings. We ground the meat, charred the pork fat, made bread-infused water and other cumbersome but fun parts of the sausage making process.

The recipe is a bit complex, and it's definitely not the easiest way to make bangers, but they turned out really good. The texture was nice and they tasted very authentic and traditional.

This dish is very simple, we stuffed the chicken with, bacon, red bell pepper, olives and mozzarella. (if you use a high temperature cheese i think it will work better)

Then we used this elastic mesh so the chicken does not disarm.

You need:


250g dried macaroni
200g grated mozzarella cheese
1 large filet of white fish
2 handfuls of frozen chopped spinach
2 tbsp chopped dried tomatoes
1 lemon
2 tbsp butter
2 tbsp flour
1 handful of grated parmesan
2 cups milk
1 tsp ground nutmeg



Cooking:


Cook the macaroni in salted water according to instructions.
Meanwhile, melt the butter in a saucepan.
When the butter has melted, add the flour and stir until even.
Add the milk little by little, while stirring to prevent lumps.
Add the parmesan, nutmeg to the sauce. Season with salt &amp;amp; pepper.
Bring the sauce to boil, while keeping an eye on it and stirring regularly.
Place a frying pan on high heat and add some olive oil.
Once hot, break the fish fillet into pieces and fry them for a few minutes. Add the spinach and dried tomatoes. Season with salt &amp;amp; pepper.
Grate the zest of the lemon into the frying pan and stir.
Drain the cooked pasta and transfer to an ovenproof dish.
Pour over the sauce and the contents of the frying pan. Stir everything around.
Spread the grated mozzarella across the pasta and sauce and place in an oven at 200 degrees celcius, until the cheese is golden.
Eat!

      <image:caption>This one was an experiment I thought of today and see if it would work. Lasagna with a skin of bread.
Firstly I put a layer of bread (made with chapatti flour) around the edges of the container. Then i began to add the vegetable lasagna in the middle, as normal.

I was happy with the outcome. It tasted nice but the bread needs to be very skinny.

I used carrots and broccoli, Then only vegetables I have at the moment and a pasta sauce from a jar which I didn't make.

      <image:caption>We've started getting Cape gooseberries (sometimes called ground cherries or "husk tomatoes"; they look like small tomatillos) in our farm share this summer, along with a pint or so of different cherry, pear, and other small tomatoes. This is one of my favorite things to do with them: a chili-spiced salad. The sweet-tart flavor of the two fruits combine really well with a little bit of heat.

Take roughly equal portions of small tomatoes and gooseberries (with cherry tomatoes, this is about 2 gooseberries per tomato), remove the stems from the tomatoes and the husks from the gooseberries, and halve them all. Add one small red or white onion, thinly sliced, a pinch of salt, a little drizzle of good olive oil, a splash of sherry vinegar, and half a teaspoon of chili powder (I use my own homemade stuff, but use what you like). Toss to combine. Serve immediately, maybe with some crusty bread and a little cheese.
